Our house tasty avo toast

Ingredients

  • About 2 avocados for 3 slices of toast.
  • Fresh bread
  • Olive oil
  • Champaign vinegar
  • Butter
  • Salt
  • Picked onions or shallots
  • Parm


Make dressing

Add 1/4 of the avocados into a bowl. If the avocados are hard, you can put up to 1/2 of the avocados into the bowl.

Add a splash of Champaign vinegar and a splash of olive oil. Add a punch of salt. Smash with a fork into a smooth texture. Taste and adjust. It should taste strong but not overwhelming.

Ruthougly dice the rest of the avocados. If they're hard, dice smaller. Add all the avo to the bold and mix together. Nom!

Make toast

Thick cut fresh bread and toast it up. Optionally spread on some butter while the bread is warm.

Spread over avocado mixture generously. If you plan to slice the toast in half, do it now.

Finish

Microplane parm onto top of the toast. Cut picketed onions or shallots into small pieces and sprinkle on top. Serve!

Alternates

  • Instead of parm and pickeled onions, try a fried or poached egg!
  • Instead of butter, try goat cheese or pesto underneath the avo
  • Instead of parm, try black and white sesame seeds
  • Bacon!
