Brown-butter goodness
Preheat oven to 375° F
Brown 1 stick butter (113g) in saucepan. Over medium heat. Wait till foam, then 4 minutes more.
Pour butter to bowl, let cool 1 min, then add 1/2 stick butter (56 g) in chunks.
Whisk into butter until no chunks:
- 200g Dark brown sugar
- 50g Granulated sugar
Continue adding:
- 2 Egg yolks + 1 Egg
- 2 tsp. vanilla extract
Separately, whisk together dry ingredients. Then fold in wet ingredients until just incorporated.
- 200g AP flour
- 4g baking soda
- 4g kosher salt
Mix in:
- 170g bittersweet chocolate chunks (60%–70%)
Let sit 10min. Scoop 6-8 onto silpat baking sheet (3 Tbsp).
Bake 8-10min. Let cool on sheet.
