Kenji's recipe

Basic idea:

  • Boil potatoes with a little baking soda
  • Toss to coat with (herbed) oil
  • Spread on baking sheet
  • Bake HOT: 450° F (or 400° with convection)

When using the recipe: Don't let the herbs dry out to much or they won't stick to the potatoes.

Photo is showing sweet potatoes. We really need to try this with russet or Yukon Gold potatoes.
