« Mushroom Pot Pie

With biscuit dough top

Ingredients

  • Trumpet Mushrooms
  • 2 Sweet Potatoes
  • Mirepoix
    • Celery
    • Carrot
    • Onion
  • Mushroom Gravy
  • Biscuit Dough
  • Garlic, Butter, Greek Yogurt, White wine

Prep

  • Preheat oven to 375
  • Dice everything
  • Dutch oven over medium heat
  • Cook mushrooms (Water, then butter set aside)
  • 2 tablespoons of Butter
  • Mirepoix (5 min)
  • Sweet Potatoes (3 min)
  • Garlic (1 min)
  • Add back in mushrooms
  • Deglaze with 1/2 cup white wine
  • Season to taste (cayenne, pepper, salt)
  • Layer on biscuits (split in 1/2)
  • Bake 15-20 min, let rest 5 min
  • Serve with dollop of greek yogurt, and some herbs if available.
