Mom's recipe

Ingredients

  • Medium Onion
  • 1.5 lbs ground beef
  • 1.5 lbs potatoes (yukon gold or russet)
  • 2 carrots
  • Tomatoes (for slices on top)
  • 4 tablespoons butter + extra for the top
  • 1/2 cup milk
  • 1/2 small can tomato paste (3 oz)
  • 2 bullion cubes
  • 1 tsp Nutmeg
  • Salt, pepper

Instructions

Potatoes

  • Cut potatoes in half if they're bigger than 2 inches
  • Cover potatoes in cold water and bring to boil
  • Simmer potatoes for 25 mins until very soft
  • Drain potatoes
  • Put them back in the pot, turn on high heat for 30 seconds to dry them
  • Mash potatoes a bit on their own
  • Add 1/2 cup milk and 2 tblsp butter, mix until combined
  • Whisk in salt & pepper to taste

Beef

  • Dice 1 onion and 2 carrots
  • Cook the onion in 2 tblsp butter on medium until soft
  • Add 1.5 lbs beef to onions, cook completely
  • Skim off fat
  • Add 3 oz (1/2 can ) tomato paste, 2 beef cubes, 1/2 cup water, 2 carrots, 1 tsp nutmeg
  • Salt & pepper to taste
  • Simmer slowly for 10 mins

Assembly

  • Butter an oven proof dish
  • Layer beef
  • Then add mashed potatoes (spead with offset spatula)
  • Top with tomato slices and butter dots
  • Cook in the oven at 350 degrees for 25-30 mins (longer if starting from the fridge)
