Our Staple: Jose Baker's Recipe

Preferment

Mix up and let sit overnight.

  • 15g - Sourdough starter
  • 120g - Water, cold
  • 105g - Whole wheat flower

Mix dough

  • Preferment
  • 240g - Water, lukewarm (80°F)
  • 375g - Bread Flower
  • 12g - Sea Salt

Stretch and fold

  • Let sit 30 minutes
  • Stretch and fold
  • Repeat 4 times total

Bulk rise

Let sit till about 1.5x original size. About 3 hours.

Shape & Proof

  • Flop out on floured surface
  • Pull in sides, flip over, form ball
  • Rest 10 minutes
  • Rice flour on proofing basket
  • Flip over and shape loaf
  • Fold 2/3 up
  • Fold 2/3 right then left
  • Roll from bottom up
  • Put in proofing basket. Bottom up.
  • Proof till 50% increase in size
  • 2hrs proof, then preheat oven for 45min

Bake

  • Preheat oven to 475° F for an hour
  • Bake 20 minutes covered
  • Then 15 more minutes uncovered
