Our Staple: Jose Baker's Recipe
Preferment
Mix up and let sit overnight.
- 15g - Sourdough starter
- 120g - Water, cold
- 105g - Whole wheat flower
Mix dough
- Preferment
- 240g - Water, lukewarm (80°F)
- 375g - Bread Flower
- 12g - Sea Salt
Stretch and fold
- Let sit 30 minutes
- Stretch and fold
- Repeat 4 times total
Bulk rise
Let sit till about 1.5x original size. About 3 hours.
Shape & Proof
- Flop out on floured surface
- Pull in sides, flip over, form ball
- Rest 10 minutes
- Rice flour on proofing basket
- Flip over and shape loaf
- Fold 2/3 up
- Fold 2/3 right then left
- Roll from bottom up
- Put in proofing basket. Bottom up.
- Proof till 50% increase in size
- 2hrs proof, then preheat oven for 45min
Bake
- Preheat oven to 475° F for an hour
- Bake 20 minutes covered
- Then 15 more minutes uncovered
